Soup for the Soul

When life gets busy, sometimes we feel the urge to pull back more into ourselves, thinking it is best to focus on our own priorities. But in the intricate balance of life, there is an unseen force in play that brings so much richness to life, that the more we share the more we have.



Can't eat eggs? Then swap for another protein, like chicken or beans!

This came into play recently for me in a small way, as a dear friend was under the weather and I just felt she needed some nourishment and extra TLC. Often the way the Lord works in my life is that when there is someone He wants me to help, a specific meal will come to my mind.


So on thinking about my friend Michelle, I thought of Vegetable Stracciatella. And in His provision, I had all the ingredients on hand as well as the time on this particular day to do it.




This is one of my favorite soups to prepare because it is loaded with great veggies: spinach, carrots, celery, garlic, tomatoes as well as some nourishing bone broth and protein. If you can't eat eggs that's ok just swap them out for your favorite protein, but whisking the eggs is my favorite part of the recipe. In the recipe name, Stracciatella means little rag, and that is what the beaten eggs look like once they've cooked in the soup.


Not only was my meal prepared earlier in the day than usual, allowing me to concentrate on other things, and I got the opportunity to help a friend, but I also was able to pass along to you a simple way to nourish your soul!
